For all you fans of bitterness, here is a dish for you! This is a healthy and easy recipe to make. You can use the stuffing recipe for anything else. Like: imperial rolls, stuffed calamari, anything you wish. I even make it into little meatballs, cook it in boiling water, then dipped in fish sauce!
For this recipe you will need:
- 1 lbs ground pork
- 1/2 cup dried fungus
- 1/2 cup green onions, sliced
- 1 tsp garlic, chopped
- 3 medium bitter melon, sliced into 1-inch thick
- 1 cup mung bean vermicelli
- 1 egg
- 1 tsp sugar
- 1/2 tsp pepper
- 1 tbsp fish sauce
Cut the bitter melon into 1-inch thickness and empty out the white center. Set aside
Now soak the fungus and vermicelli in boiling water for about 5 minutes. or until softened. Chop the mixture into smaller strands with a pair of scissors.
Now add the pork, egg, green onions, garlic, sugar, pepper, and fish sauce. Mix well.
Stuffed the bitter melon slices with the pork mixture and cook in boiling hot, salted water for about 10 minutes.
Strain and add the stuffed bitter melon in a homemade stock made with pork and dried shrimps or any other broth that you prefer. Serve with a bowl of rice and some fish sauce on the side for dipping!
