Curried white beans



















My boyfriend and I have about three to four days a week where we would eat a vegetarian meal for diner. So today was a cool day. I say cool because the last week has been really hot! I wanted to make something that would warm up our body a little bit...


 For this dish you will need:
  • 1 tbsp olive oil
  • 1 medium size onion, diced
  • 1 medium size apple, dices
  • 4 garlic cloves, chopped
  • 1 can (1 1/2 cup) of cooked white beans, or any other kind is fine
  • 1 tbsp curry powder.
  • 1/2 cup water
  • 1/2 cup fresh parsley, chopped
  • salt and pepper to taste

 Start by sauteing the onions and apples. When the onions are translucent, add the chopped garlic. Cook for another minute. Add your bean and curry. I use Japanese curry. It comes in little rectangular blocks, but you can easily substitute it with your favorite curry powder or mixture. Pour the water and let it simmer for about 5-8 min, until the sauce starts to thicken up a little bit. And voilà!!! I served it with three different kinds of salads: carrots and raisins, parsley-tomato and sprouted kasha, cabbage sweet ans sour salad. There is also a piece of bread with melted cheese on top. Very comforting for the soul!
